Pro tips for chemex
A recipe for lovers and for double-dosers.
Start by boiling water. Gather your filter from the fridge and all other equipment. If this is the first time you're using this filter, remember to boil it for 5 minutes to shrink and prep fibers.
While you wait for the water to boil, grind 45 grams of coffee. The grind should be slightly coarser than table salt. Set filter in dripper and pour a small amount of boiling water through to heat. Wait for water to drain. Dispose water and add coffee grounds.
Preinfuse – add 60 g of water to your bed of coffee and watch it grow, bloom and pop.
After 50 seconds, slowly pour in concentric circles until you reach 300 g. You've created your high waterline.
Wait for waterline to drop about 1/2 inch, then again pour in concentric circles adding about 100 grams of water at a time until you reach 650 grams. At 650, you're done pouring!
Wait for bed to dry around 4:15-4:45. Remove filter from dripper and serve. If your brew time is under the suggested time range, use a finer grind next time. If your brew time is over the suggested time range, use a coarser grind.
