325 grams total water or 1 1/3 cup
22.5 grams of coffee or 3 1/4 tbsp
Bring water to a boil and grind coffee to the coarseness of table salt.
First pour, bloom pour, approximately 40g of water
Pour flowrate: approximately 8 grams a second
Wait 45 seconds
At 45 seconds pour until the total water volume is 135g
Pour technique: concentric circles, beginning and ending in the center
At 1:10 pour until 230g
At 1:35 pour until 325g
Let it drip out and serve
